Hi Ellen, I have looked up the taco bar page and now have a clear idea on how much meat and sides to make, thank you. One question i still have is this: How much salsa and guacamole to make for 160 people. The salsa and guacamole will be for Appetizers with Chips AND for the Taco Bar for 160 people. I will have a Salsa Verde, a Roasted Tomato Salsa, and Guacamole with Chips as Appetizers. Then I will have those same 2 Salsa's at the Taco Bar plus Pico de Gallo.
How much should I make of each salsa and guacamole? (I was going to make 60 avocados worth of guacamole?) |

Appetizers Salsa Verde, 3-4 quarts a Roasted Tomato Salsa, 5 quarts Guacamole- 6-8 quarts, people love this Chips, 1 pound per 12

By the way, fruit trays with the appetizers would be very nice. |
