I'm planning a barbeque for 200 people. How much chicken, ribs, hamburgers, hotdogs and fish will be needed? Also how many watermelons, honey dew melons and other fresh fruit will be needed? This is for the 4th of July |

Renee, I never recommend fried fish for large outdoor gatherings, especially when kids are around. Can you skip it? To estimate the amounts and the fruits, I need the rest of the menu and desserts. |

Thanks for the reply Ellen. As it stands right now, we're planning on having Pound cake, chocolate chip cookies, brownies, oatmeal cookies and lemon cake. They want also want potato salad, macaroni salad, bean salad, baked beans, cucumber salad, tossed salad, pasta salad and because these folks are from the Caribbean, rice and peas. We are skipping the fish all together.

potato salad, 50-60 pounds potatoes
bean salad, 5 gallons
cucumber salad, 22-24 pounds cukes, 5 pounds sweet onions rice and peas, about 8 pounds dry peas, 16 pounds dry rice
