I am cooking for a wedding of about 40 people and wondering how many chicken breasts to use for shredded chicken for the warmer.. and also what you would suggest doing to prepare the chicken .. would you bake it or boil it? |

about 12-16 pounds raw boneless if it is the only meat. This works very well in a couple of low crock pots- not baked and not boiled. Here is a slightly sweet shredded chicken VERY popular in Tex Mex salads and tacos, try a family recipe, see what you think: The characteristic slightly sweet shredded chicken is easy to make in a crock pot (or simmered at just 200 degrees). The original Bajio recipe uses caramelized onion and a green chile chutney, this one is a bit less sweet. Adapted from Real Mom Kitchen. This is the proportion, count your breasts to figure the total. You need 1 pound raw boneless per 4 if self serve, per 5 if you serve.
