| linda 06/20/13 | I'm catering a party of 50, I'm serving pulled pork bbq, salt potatoes. I'm cooking the pork prior, then shredding and adding bbq sauce. I have to transport about 25 miles to site. Also will be servine this in the sterno tables to keep food warm. How far in advance can I make the salt potatoes, and how long will it take the pork bbq to heat back up in the steam tables after being in refridgerator. | 
| ellen 06/20/13 | It is unsafe and ineffective to try to heat cold food to serving temperature in chafing dishes, they can't go above 145 degrees. It must be reheated in a stove, oven, or roaster, and transferred after it reaches an internal temp of 165. I have never tries to hold salt potatoes, but I do plan about 2 pounds per 5, they are quite popular. |
