I'm hosting an outdoor picnic and would like some guidance on quantity based on the following Menu. I expect to have about 100 guests.

Hamburgers/Cheese Burger
Brats
Hot Dogs
Boneless Chicken

Pasta Salad
Potato Salad
Green Leaf Salad
Green Bean Salad

Corn on the Cob
Baked Beans

This is what I would do:
Hamburgers/Cheese Burgers- 1 per person
Brats-1 pound per 6
Hot Dogs-skip? kids choke on them and the brats will satisfy sausage eaters
Boneless Chicken- 1 pound raw per 4-5

Pasta Salad- 6 pounds dry per 100
Potato Salad-30 pounds potatoes plus fixings
Green Leaf Salad- see plan for 100 salad section
Green Bean Salad- 18 pounds green beans

Corn on the Cob- 120 pieces, can be "cobbettes"
Baked Beans- 3 gallons per 100

Boiled- 1case-turkey necks, 30lb-potatoes, 50-corn on the cob and 20lb-smoke sausage.
BBQ- 18slabs(st louis)-Ribs, 1case-Chicken legs, 35lbs-pulled pork and 25lbs-brisket
Sides-2#10 cans-BBQ beans, 2full size pans-Jambalaya, 2 full size pans-mac n cheese,2gallons potato salad and 150yeastrolls
Desserts- 72-single serve pies(apple, pecan & sweet potato), 36-indevidule-strawberry short cake and 36-brownies, 36-rice krispy treats along with a graduation cake.

I have to estimate for 150. You have more than you need of some things, short on others

Boiled dinner-
1 case-turkey necks,
30 lb-potatoes, do 40
50-corn on the cob- do 75, break in half
20 lb-smoke sausage.

BBQ-
18 slabs (st louis)-Ribs, cut into separate single ribs after cooking
1 case-Chicken legs, 40 pounds, about100 legs
35 lbs-pulled pork - too much. With other meats, no more than 15 pounds
Rolls- 5 regular or 12 slider per pound
4 gallons slaw, 5 quarts pickle slices, 8 pounds sliced onions for sandwiches

25 lbs-brisket- too much, with all the other meats you could skip entirely, or do 20 pounds and have someone serve it. Put at the end of the meat line.

Sides-
2#10 cans-BBQ beans, for 150 people usual is 6 cans, do at least 4, some meatless
2 full size pans-Jambalaya, about 60 servings
2 full size pans-mac n cheese, about 60 servings

2gallons potato salad, short, usual is 3 1/2 per 100

150 yeast rolls- in addition to sandwich rolls, OK,get 4 pounds butter

Desserts- 72-single serve pies(apple, pecan & sweet potato), 36-individual strawberry short cake and 36-brownies, 36-rice krispy treats along with a graduation cake - plenty, some left, if it is a full sheet cake, you could omit the shortcake.
