Hi! I am trying to recreate a wonderful dessert I had recently in Taiwan - Douhua. I see a recipe here with a slightly different name:Dofu Hua. I have magnesium chloride (Nigari), but I do not have terra alba, or gypsum. Can I substitute the nigari for the gypsum? Should I change the amount needed? I can experiment, but would appreciate your advice! |

Yes, it is twice as strong, so use half as much. |
