Roast Beef & baked chicken

Hi Ellen
Our church is serving a wedding, buffet style to 250 people at 6pm end of July. We have a commercial kitchen with lots of space and help.
I'm not sure of these amounts.
roast beef-55lbs
boneless chicken breasts cut each one in two-70lbs
I figured we'd need a total of 125lbs of meat am I correct?

mashed potatoes-80lbs
baked beans
green beans
applesauce

Dianne, even if you have a server for the roast beef, you need at least 90-100 pounds for 250 people (I normally recommend 125 pounds, but I'm betting you are a budget). Then 60 pounds boneless chicken.

mashed potatoes-80lbs- suggest 100
baked beans-8 gallons (about 20 pounds dry)
green beans-55 pounds
applesauce- 4 #10 cans per 100
How about rolls, 12 pounds per 100, and about 8 pounds of butter.

With all those great ovens and stoves, could you consider something like a roasted veggie dish served room temp?

suggest some appetizers? Fruit trays, see the fruit tray page, maybe cheese and crackers- you can do logs and spreads- 30 pounds cheese and 15 pounds crackers.
