Cheese

Hi,

Having an informal lunch for 60 or so with canapes, main, desserts - and then a bit later planning on bringing out the cheese board. (There'll also be birthday cake and ice cream run during the afternoon too !)
So, the big question is, please can you give me a suggestion on how much cheese should I buy ?

Thanks !

That's a lot of food. 1 pound per 8 is plenty, and I suggest that, budget permitting, you have some fun with it- a goat, Irish or English cheddar, a blue (I like Gorgonzola dulce, Stilton without any additions, or a true Roquefort) and an 18 month old Gouda, for example. 3-4 pounds of assorted simple crackers.
