I am making approx 250 or more chicken salad filled croissants for my dtr's upcoming wedding reception. I would like to do as I can ahead of time, can u tell me if I can freeze chick salad? It will have mayo and miracle whip as a base |

chicken salad fcan u freeze? forgot to mention i will be serving chick salad in the mini 4" croissants, about how many per person? in addition we will be serving chips, dip, cotton candy, fruit cups & popcorn, and cupcakes. thanks in advance! |

No, you absolutely cannot freeze chicken salad with a mayo base. See the three tea party pages for discussion on what kinds of tea sandwiches can be frozen. |

Juli, the amounts also depend on what time the reception is and how long it lasts. You need to tell me more if you want help with the other items. |

okay if i can't freeze, i don't want to be making it last min, I can't fit it all in my fridge.. any suggestions?? would it be okay to put it in big cooler with ice overnight? the reception starts at 7 pm to roughly 9 or 10 pm - would 2 sandwiches per person suffice? (as we will be having more items to eat as mentioned in my previous post) thanks soo much!! |

2 sandwiches per person is OK, you don't say how many people. You need to borrow refrigerator space, the cooler is not reliable for food safety. You want to put the chicken salad into baggies so it is no more than 2 inches thick at the thickest point, so it will chill well. This does not make any provision for the people who don't eat meat, and with more than 100 guests, you will have some. I would add cheese trays (12 pounds cheese and 6 pounds crackers per 100) and fruit trays (see fruit tray page) to this manu for a 3 hour party. |
