10/22/05 		It depends on the type of recipe. Rice is gluten free and makes a very crisp. tender crust for frying. You can buy rice flour in any oriental grocery, most natural food groceries and online. For some recipes, cream of rice, in the oatmeal section of your grocery, can be substituted. And you can grind rice for flour in small amounts in a bladed coffee grinder or heavy duty blender.
