Hi Ellen,
I was asked to help with a wedding and need help with amounts. 240 people serving buffet at 6pm

Lemon Pepper Chicken(cut chicken breasts into 3 pieces each)one for each person
Bride said chicken seems to be the favorite
Roast Beef-60lbs
Mashed Potatoes-100lbs
Green Bean casserole-use 9 #10cans
Baked Beans-8 gals. enough to fill 2 18qt. roasters
Filling-3 full steam pans
gravy-6 gals.
rolls-20doz.
applesauce- 10 #10 cans
Lemonade-5 gal
Sweet Ice Tea-5 gal
Her family is taking care of the appetizers

Do these amounts sound right?

You need 4 serving lines or 2 double-sided; 4 kitchen people, about 15 servers to set up, serve, and clean up a party this size.

Bride said chicken seems to be the favorite
Roast Beef-60lbs- probably run out- have someone serve the first round
Mashed Potatoes-100lbs- OK

Green Bean casserole-use 9 #10cans- see ellen best green bean casserole in the top section at big pots- do at least 3 times the recipe
Baked Beans-8 gals. enough to fill 2 18qt. roasters- that is about 6 Filling-3 full steam pans=stuffing? this is only about 90 servings

gravy-6 gals- 5 enough
rolls-20doz.- need 30 pounds, 7 pounds butter
applesauce- 10 #10 cans- some left- 25 servings per can
Lemonade-5 gal- at least 12
Sweet Ice Tea-5 gal at least 8 and unsweet at least 4
