Ellen, I am catering my daughter's wedding, and the menu is naked burritos (rice, beans, chicken, pork and the toppings). We have most things figured out, but the rice presents difficulties. How to do it day before or that day without overtaxing anyone. We could use a good Mexican rice recipe as well. Any thoughts? |

There are several Mexican/ Spanish rice recipes for 100 on site, both pink and yellow. Do same day, reheated is not so good. Oven baking is easiest for this much, you need at least 8 pounds dry per 100 and I have gone to 10-12 pounds for very hungry crowds. |
