Ellen,

I need help with quantities for about 125 people...maybe 15 teens, 10 kids, rest adults...open house to include:

Chicken wings or tenders
hot dogs with chili sauce and onions
giant sub sandwich
mac n cheese
chick pea salad with feta/olives/onions
pasta salad
lettuce salad or possibly broccoli salad
chips
cake
cookies?
pop, water, lemonade

(mixed nuts, chex, etc for table snack and fruit salad or other fruit...sister is doing this part and always makes plenty)

Thank you for help. Also have never given party this size...any idea how to estimate actual attendance...rule of thumb? Again, thank you.

Usually, with mostly local invitations, about 85% attend.

Chicken wings or tenders- do tenders or nuggets, no bones found in odd places; 1 pound per 5. Usual to have dipping sauces, 1 cup per 5-6
hot dogs with chili sauce and onions- have 200 available, but don't open last 40-50 till you see how it is going. Rolls for 180. Leftover rolls make good bread pudding...
Chili sauce 1 quart per 30 people, onions, maybe 6 pounds?
giant sub sandwich- 6 foot sub makes about 30 servings

mac n cheese-10 pounds dry pasta
chick pea salad with feta/olives/onions- 2 1/2 to 3 gallons
pasta salad- 6 pounds dry pasta
lettuce salad or possibly broccoli salad- use plan for 100 page, do for 100

chips- 1 pound per 10, 1 cup dip/salsa per 6-8 ( thicker serves fewer people)

cake- double full sheet makes 100 servings- plenty
cookies- never a bad idea, do smallish, 2-3 per person

pop, water, lemonade, see beverage page, but with that many adults, also do dinner level coffee, same page.

Should I plan 1 sub sandwich serving per person...
and 1 cake serving?

Is that the typical estimate?

Chick peas come in 108 oz. cans...how to translate into gallons.

Also, what is "plan for 100 page"...is that on this site?

With the other items, 2 6 footer sandwiches would be fine. The cake, yes, one for everyone.

The buttons for the plan for 100 page, the beverage planning page, the fruit tray and veggie tray page, and much more are at the top of the main forum/ cooktalk page.

Yes, a #10 can holds 12 1/2 cups.

We are now having pulled pork sliders instead of chicken tenders to cut cost...so now main dishes are subs, hot dogs, sliders and mac n cheese with same sides. Can you suggest amount for sliders/rolls? Thank you for your help. Again about 125 or so people.

100 hot dogs
120 sliders (1 pound raw boneless pork makes between 6 and 8, depending on bun size and who is making them.)

Thank you...so you originally thought 200 hot dogs...we're bringing it down by 100 now?

And as RSVPs come in, at what point do I adjust up or down and how would I do that? I should not have more than 150 no matter what.

The sliders make a more substantial entree than the chicken tenders, so the hot dogs will go down.

I can't help on the RSVPs, varies too much by gion, age, etc. Make changes by percents and multiplying.
