My Doctor has recently told me to eliminate white flour, sugar and soy. Whole wheat bread is fine, but I miss a good light crusty bread. Does anyone have a recipe that fits my needs, and that I can use in my bread machine and in pizza dough. Please, I miss my bread. |

You can increase the crusty chewiness by adding a couple of tablepoons of gluten to each loaf, this will also let it rise a bit higher. If you read the KIng Cake rcipe, which is actually a buttery brioche that can be mixed in the bread machine but baked in the oven, and make it with whole wheat pastry flour and the added gluten, you may be happy with the result. |

breads without gluten, white flour, sugar, or rice I have been diagnoised with Candida (intestinal yeast) and gluten intolerance. I am having a hard time finding a bread source. They tell me that cornmeal is OK. But, I am having to stay away from Sugar, White flour, White rice and gluten. Do you have a recipie that would fit these guidlines? Or, know of a type of bread that I could purchase? |

Gluten-free baking is a special field, and the best cookbook I know for it is Bette Hagman's Gluten-free Baking. You need a bread machine to make "normal" type loaves at home without gluten. |
