Hi Ellen! Feeding about 135 hungry football players and coaches "pulled chicken sandwiches". Can you please give me an estimate on the amount of chicken, and bbq sauce needed.
I will be cooking in the school kitchen- Any tips you can give, I would greatly appreciate! |

Figure 2 sandwiches each, and you need sides as well. 65 pounds boneless chicken (I recommend thighs) 14 pounds of onions 14 pounds bell peppers about 2 gallons sauce for mixing. another 1 1/2 gallons for the tables 2 gallons pickles, 10-12 pounds sliced onions for the trimmings Scalloped potatoes would be a great side dish for this- about 65 pounds of potatoes 270 rolls |
