Amy, you don't indicate how you want to cook this. You need 50 quarts of casserole, which is 4 Nesco roasters or 20 regular 9x13 pans for this amount of people. According to the Pittsburgh Post-Gazette, "Johnny Marzetti is a casserole created in the 1920s by the owner of the Marzetti Restaurant in Columbus, Ohio. Who was Johnny Marzetti? According to the "American Century Cookbook" by Jean Anderson, Johnny Marzetti was the brother of the owner of the Marzetti Restaurant. "Casseroles steamrolled into the kitchen in the 1940s and have remained popular staples to this day. The Johnny Marzetti casserole was popular in the mid '50s and early '60s. It consists of meat, pasta and either tomato sauce, soup or juice." Veggies and cheese have since appeared as variations. The original spelling is Johnny Marzetti, the Amish renamed it as Johnny Mazuma and other spellings have come/gone as well. The original recipe was baked in the oven and had Sharp Cheddar Cheese in it, home cooks found that the Cheddar would separate and get grainy so they started using American or Velveeta. Besides in the oven, it can be made on the stove top, crockpot or microwave. I will indicate optional ingredients, which you may leave out or substitute. To make the dish, make double the recipe of my Basic Budget Entree "Baked Spaghetti" in the Big Pots section, with these changes:
Use 20 pounds total broad egg noodles instead of sphagetti. Most current Marzetti recipes do include the mushroom soup, but mixed into the sauce instead of layered on top. If you do not use the soup, you will need to substitute an equal amount of tomato sauce. |

By the way, some recipes use canned creamed corn instead of the soup base in Marzetti. Also, some of the later recipes do call for stuffed salad olives. |

A 9x13 pan serves 10 and takes 1 1/2 hours at 350. 5 9x13 pans takes 2 1/4 hours in the same oven.
50 pieces of chicken or chicken breast Mix together all ingredients except the chicken. Place in baking pan/s and bake one hour, covered. Stuff the chicken pieces into the top of the rice and bake for another 1 1/4 hours, uncovered, adding a little water if rice becomes too dry. |
