Wedding Reception

I am planning my niece's wedding reception for 100 people for next Saturday (8/24). The wedding is at 2:00pm and the reception will last about 2 hours. Fruits, veggies and cheese n crackers will be served and a candy bar, coffee and punch and wedding cake.

1. I am serving 10 different kinds of fruit with fruit dip. How much of each fruit should I purchase? Do you think a half gallon of dip is enough or should I make more?

2. I am serving 12 different vegetables with veggie dip. How much of each vegetable should I purchase?

3. I am serving 5 different kinds of cheese for crackers (some will be skewered with tomatoes, grapes and olives) and 3 different kinds of cheese balls. How much of each of the five cheeses do I need? And on the cheese balls, I figured I would make enough of each ball to feed 30. Is that right, too much, too little? How many boxes of crackers should I purchase?

4. Do you think I should also serve soft drinks or is the punch enough? I was trying to avoid soft drinks but I'm wondering if I should since I'm serving crackers and cheese.

A pleasant, light menu. Some notes about each:

1. I am serving 10 different kinds of fruit with fruit dip. How much of each fruit should I purchase? Do you think a half gallon of dip is enough or should I make more?
You don't say which fruits. Take a look at the fruit tray page and use the deluxe tray for 100 as your guide. Any fruits not mentioned, add; you need to add about 8 pounds to make enough for 150. 2-3 quarts dip for 100 people

2. I am serving 12 different vegetables with veggie dip. How much of each vegetable should I purchase?
Please use the veggie tray page for this, vegetables vary hugely in how much waste there is, for example, none with grape tomatoes, a bit with carrots, a lot with broccoli, and this is all covered on the veggie tray page.

You want 6-8 pounds crackers. You want about 16 pounds of cheeses including the cheese balls, and you may have some left.

If I were you, I would have about 8 gallons of punch punch, some iced tea (6 gallons, 3 unsweetened) and dinner level coffee from the beverage planning page, unless it is a very young crowd that doesn't drink coffee. Most people enjoy coffee with their cake, and the page has advice on some teabags, etc to go along. Bottled water is also popular- 2 24 bottle cases.
You will need someone to bring bagged ice, at least 40 pounds.

Hi Ellen! I looked at the veggie tray page and it says 2 oz. of veggies per person (which would be 16-17 lbs for 100 people by my calculation) but I noticed on the appetizer planner for 100 people, it says 30 lbs trimmed, ready to eat so I'm confused as to how many lbs of veggies I should buy. I'm using a lot of the veggies that are on your Raw Veggie Favorites list. Can you clarify for me?
