Help for this size party is 2 pig roasters (not part of the wedding party- unless your dad is not coming to the service); 3 food people/cooks; 10 to set up serve and clean up the party. All not party of the wedding party.

These items set up in two appetizer areas for the wait after the service while you get photos, etc

Fruit tray - 8 seedless watermelon, you only need about 40 pounds
4 lbs red grapes, 4 lbs green grapes, 4 cantaloupe, all OK
4 lbs strawberries, popular, go for 6-8
4 honeydew, OK
3 pineapples- 4-6
Caramel fruit dip - 1 qt
Yogurt fruit dip - 1qt go 1 1/2

Cheese and cracker tray - 15-20 lbs assorted cheeses and 9 lbs Ritz-style crackers- OK

Dinner

Roast pig - approximately 200 lbs (My dad is providing the pig- good, plenty
Ham rolls (onion and pickle) - unsure on the amount for these- would you consider a non-pork, such as turkey or beef- not everyone eats pork- 2 bits (about 1/2 sandwich) per person
BBQ sauce for pig- 3 gallons, some left
Suggest you add a non-meat entree, such as vegetarian field roast sausages or veggie burgers, about 20

Mac and cheese - 2 - 12qt pans
Cheesy potatoes - 2 - 12qt pans
Good, probably none left

Baked beans - 4 1/2 gallons = 18qts- OK, meatless a good choice
Potato salad - 4 1/2 gallons (40 lbs)- OK

Veggie tray (lined w/ lettuce) - 5 lbs baby carrots, 3 lbs celery, 3qts tomato, 8-10 cucumbers, 3 lbs broccoli, 4 lbs cauliflower,
OK, maybe less cukes and increase boc/cauli
Ranch dip - 2qts- a bit more- 2 1/2 to 3

Pickles - 1 gallon- 1 1/2, some dill, some sweet
usual to have 10-12 pounds thin sliced onions for the pork
Olives - 1 gallon- 1 1/2

Punch - 10 gallons- 12
Tea - 10 gallons- 12, 1/3 unsweetened
Coffee- use dinner level coffee on the beverage planning page
ice, at least 1/2 pound per person

200 cupcakes- OK, maybe consider adding 200 small brownies

Dinner plates - 300
Dessert plates - 300
Napkins - 750
Silverware - 300 heavy duty sets with extra spoons

All good, do not forget all the serving utensils.
