Hey, I went looking and discovered that pork menudo is a classic Filipino dish. Living in Texas, I was only familiar with the classic Mexican style. So here is a recipe for 8:

It depends on whether it is a Filipino or Mexican style recipe. A typical Mexican recipe doesn't have pork and liver, it has tripe and calves feet' You do about 4-5 pounds of tripe and 2 calves feet or 1 1/2 pounds beef or veal knuckle for each 10 people. If you are doing a pork recipe, about 1/4 pound per person, or about a kilo per 10. |

Marilyn, this dish has quite a bit of variation. from region to region and even family to family. Chevon (goat meat), beef, or pork combined with potatoes, carrots, tomato sauce, and liver spread or liver paste. Basically, per each 6 people, I would allow 2 pounds meat and 2-3 cups each of potatoes and carrots, a cup of tomato sauce and about a 1/2 cup each of liver paste and olives. I can't do pricing, too much variation. Hope this helps. |

25 pounds boneless pork shoulder, cut into 1-inch cubes If you want to marinate the liver cubes, or the pork, make a marinade of 2/3 low salt soy sauce and 1/3 lemon juice, put cubes in baggies and soak in for a couple of hours.
In a small bowl, dissolve annatto powder in 1 quart water. Set aside. This stew is also made with canned tomato sauce instead of fresh tomatoes. |

Johanne, when I cook beans as a main dish, I do 12 pounds dry per 100. Sausages, etc, about 18 pounds per 100 for taste, aup to 25 for heavier meat. |

Maryann, this is the recipe I use for about 120 people; you could do 1/4. This recipe is very garlicky; you can cut the garlic in half and still get a good result. TexMex Menudo The toasted, ground fresh peppers are key; some cooks use a combination of other peppers such as ancho, arbol, dried Hatch (hot) chiles. It’s easiest to cut the tripe when it’s partially frozen. Refrigerate this soup overnight and reheat the next day, to allow the flavors to blend.
Ingredients for 120 generous servings Some people soak the tripe in a mixture of 1 part vinegar to 8 parts water for about an hour before cooking. Simmer the tripe for 1 hour covered with water. Drain off the water. After you have started the tripe, in a separate pot, simmer the feet and marrow bones in a large pot with about 6 gallons of water, garlic cloves and onions for about 30 minutes at medium heat without covering. During this time, skim off and discard the foam that forms. Add the tripe and oregano and optional red pepper and cook for about 2 hours approximately until tripe is tender but firm (make sure you do not overcook). The liquid should cover all the bits- add more if needed. You could also use roasters and set them on 185-200 degrees for about 6 hrs. Remove the feet and marrow bones from the pot. Skim the fat that forms on top of the broth. Once the feet cool a little, remove the bones and chop the meaty parts; return to the pot. While the meat is cooking, prepare the Guajillo broth. Toast the dried Guajillo peppers on a griddle over medium heat. Press them down with a spatula, slightly toasting them without burning them.
Place the toasted peppers in a bowl and cover with water. Let them soak for about 25 minutes until soft. After that, process them in the blender in batched; drain the peppers and place them in your blender with the rest of the garlic, a cup of the broth, and cumin if using. Blend until very smooth. Strain the sauce using a sieve and pour into the pot. Add the hominy. Simmer the broth for another 60 minutes, partially covered. Taste to season with more salt if needed. Do not forget warm corn tortillas to soak in the broth. 2-3 per person, with about a tablespoon of butter per person. |

Are you doing Filipino style or Tex Mex style? Both those recipes are already posted on this thread, the Filipino is listed 10/5/2014. 3 kilos of pork is about 8 pounds, and that recipe calls for 25 pounds, so you would just do 1/3 of all the ingredients. It will feed 30-35 people. |

Im sorry, this is a very odd menu if you are serving all at the same time, and it is quite difficult to estimate amounts on 4 such diverse entrees, especially without knowing the type of event or the type of crowd. Raisa, this is way too elaborate a menu for 150 people; usual is 3 entrees, 2 starches, 2-4 veg and/or salad, maybe 1-2 specialty such as the lumpia. You have 5 entrees, no veg, 1 starch. Way too much cooking for one person- are you hiring help? Also, the kinilaw and escabeche are food safety challenges, they need to be served over ice if done buffet style. So please revise your menu, especially adding the delicious fruits and veg available in your area. Also, you will need about 6 people assigned to setup, serve, and clean up the party- could be family or hired, but plan ahead. You can write back. |

This is shoulder, and 1 kg boneless makes about 4 1/2 cups- just over a liter of meat. How much menudo you end up with depends on your recipe. Usually a kg of meat makes about 9-10 entree portions. See above 10/05/14 for a recipe for 100 |

Low-sodium chicken broth- 5 gallons 1. Combine broth, soy sauce, pepper, and garlic powder in a large stock pot. Bring to a boil.
*Fresh celery, diced 1/2" (cut at an angle)- 17 pounds=3 gallons, 2 quarts 2. Add celery and onions. Reduce heat to low and simmer uncovered for 10-12 minutes. Set aside..
Cornstarch- 6 cups=2 pounds 4 ounces
Precooked sliced or diced pork or chicken- 13-15 kilos 6. Critical Control Point: Heat to 165 °F or higher for 15 seconds. 7. Pour into a steam table pan (12" x 20" x 4"). use 6-7 pans. |

This is a lot of meat dishes which makes an expensive menu and is more difficult to estimate accurately with this small of a group- larger groups are actually easier to estimate. For this menu 1 pound of pork belly per 5 people (that's about 1 kilo per 12) would be about right. Try to get the hosts to add more fruits and vegetables as tha will reduce the amount of meats needed. |
