Hi Ellen, we are having a fundraiser luau serving kahlua pork, teriyaki chicken thighs, rice, Chinese cole slaw salad, baked beans, and a roll. No dessert because we are having a bake sale. We are expecting 400 people. I'm thinking we need 200 lbs boneless pork, 150 lbs boneless chicken thighs, 75 lbs rice, 75lbs coleslaw mix, 450 rolls. Are we on track?

That is way too much meat.

Even if they are self serve, which uses the most, about 150 boneless pork and 100 pounds boneless chicken is plenty, and if you have some servers for the first round of meats, you will even have some left.

You will probably have rice left, I would expect closer to 60 pounds dry. Slaw is OK, maybe even a bit light, depending on what you are adding. At least 600 rolls and 10 pounds of butter.

12 gallons of beans, thats about 32 pounds of dry beans.

You need some fruit on the plate, even a slice of watermelon or pineapple would do.
