Would you recommend suspending the foil half pans directly over the water pan? |

Most brands, the full aluminum pan is not strong enough to support itself over the chafer steam pan. You will have to check yours out. |

If you have purchased the ones actually made for chafer use, they need to be over an inch of hot water, not in. It takes 45 minutes to heat cold water from cold to hot enough. |
