Chili for 120 teens

We're having a dinner for 100-120 teens. The Church has no kitchen so it's all being done in my kitchen and transported in big pots. I have multiplied the Insanely Easy Vegetarian Chili recipe from All Recipes. Does the following look right?
PLEASE advise if you see anything wrong.

Thanks for all your great information. We are in Luxembourg where we use weight, not volume, for measuring.

Insanely Easy Vegetarian Chili from All Recipes:

8232;225 ml vegetable oil
8232;2.4 kg chopped onions
8232;1.4 kg chopped carrots
8232;45 cloves garlic, minced
8232;2.2 kg chopped green bell pepper
8232;2.2 kg chopped red bell pepper
8232;1.4 kg chopped celery**
8232;120 g chili powder
8232;1.6 kg chopped fresh mushrooms
8232;15 (28 ounce*) cans whole peeled tomatoes with liquid, chopped
8232;8 kg kidney beans*** with liquid
8232;15 (11 ounce*) cans whole kernel corn, undrained
8232;90 g ground cumin
8232;35 g dried oregano
8232;20 g dried basil

Hi, Pat, I

I looked up this recipe on all recipes, and have a few suggestions:

It's teens and there are adults, figure on 130.

-This is basically a tasty mixed veg soup with a little spice. Could double the garlic, chili powder and cumin and still not be too spicy. There is a good chili powder blend recipe on this site.

-mix up the beans- canned black beans and garbanzos are two goos choices

-refried beans can be used to thicken without adding more tomato sweetness

-you want to have cornbread; chopped onions (about 5 pounds), sour cream (the large 6+ pound container) and 5 pounds shredded cheese as toppings

-could put out hot sauces for those who want more heat

- it is MUCH better if made a day ahead and held in the refrigerator or cooler

Thank you very much for your prompt reply and expert advice. We have another choice which is "Moroccan stew". Got this recipe from South African friends. I have multiplied it to 120. Do these quantities look right to you?

Moroccan stew for 120

Several tablespoons Olive oil.
3 kg carrots
28 kg squash or squash & sweet potatoes
3 kg medium onions
6 kg green/red/yellow peppers
20 cans 20x200 grams chickpeas 4 kg
32 cans 32x560 grams tomatoes = 17.92 or 18 kg
10 cups raisins
10 tbs cinnamon
20 pinches chili flakes
8 tbs chopped coriander

32 cups couscous, 4 kg
32 cups water
8 stock cubes
butter

Cook/heat it in batches, not in one pot
Boil water for blanching
Peel and saute onions, peppers in the olive oil until onions are golden
Peel and chop carrots, squash, potatoes, and blanch them
Add: rinsed chickpeas, tomatoes, raisins, cinnamon, salt, chili flakes and 6 cups water, simmer 30 minutes
Add coriander

Separately,
Add stock cubes to water,
Add this broth to the couscous. Wait for it to cook, 5 minutes.

This will depend completely on whether these teens are adventurous eaters. The chili is so mild it is almost a vegetable soup. This is quite a bit more adventurous. The measurements are about right for this size recipe, though I might do 40 cups of couscous for 120 people.

Thank you for your help. I don't know how adventurous they are. They live all over europe. Our typical european home fridge is about 1/3 bigger than the average North American bar fridge so the chili will probably take up the whole fridge and then some. I do have a cooler and will read your advice on "holding".
