I am doing a dinner of chicken enchiladas, refried beans, and Spanish Rice for 300. My question is, can the beans and rice be made the week ahead and frozen then thawed and warmed? How would you do it and for how long? The enchiladas will be made that day. Thanks for your site and your help. |

The beans can be made ahead. put in fridge 2 days before to thaw thoroughly, reheat covered in the oven. Rice does not benefit from being frozen and reheated, if there is any way to do so, it should be made day of. |
