We are a group of volunteers that prepare and serve homemade meals to the touring companies that perform in our theater. Next week a "star" is coming and wants grilled salmon and wants it kept warm for 5 hours. We cook these meals at home and then transport them to the theater. There are no appliances there. How do I safely keep salmon warm for that long? We have chaffing dishes. |

That person is foolish; salmon "kept warm' for 5 hours is unsafe and overcooked. Borrow or buy a large electric pancake griddle or a couple of George Foreman grills, take them there, and plug them in and cook when the show is over. Fresh and delicious. |
