Hi, Kyle,
This depends on whether it is the only dessert. Assuming you are talking about brownie bars, not actual layer cake type cake.
This may make you laugh, but you need about 9 square inches of brownies per person if it is the only dessert, but just 2 small pieces, about 3-4 square inches per person, if it is part of a dessert buffet.
Two full sheets make 100 3x3 brownies. This is a standard food service recipe.

All purpose flour 3 pounds, 2 quarts, 3 cups
sugar 5 1/4 pounds, 3 quarts
cocoa, 1 1/3 pounds, 1 quart, 3 cups
baking powder, 1 1/8 ounces, 2 1/3 tablespoons
salt, 1 tablespoon
shortening 2 3/4 pounds 1 quart, 2 cups
eggs, whole, 1 quart, 1 1/4 cups
corn syrup, 1 7/8 pounds, 2 5/8 cups
vanilla extract 3 tablespoons
chopped nuts, 30 ounces, 1 1/2 quarts
(you can also add chocolate chips, same amount)
non-stick spray

2 full sheets (18x27)

convection oven, 325, 25-30 minutes, high fan, open vent
standard oven, 350, 25-35
Do NOT overbake, cool before cutting.
