I am cooking frozen chicken cordon bleu for 200 people. My Home Owners Association has a beautiful professional kitchen with 2 large convection ovens. I can put 5 full size sheet pans with 100 chicken cordon bleu on the 5 shelves in the oven. My problem is how long to cook them. It took 45 minutes to cook 2 chicken cordon bleu in my home convection oven. Last month I cooked 100 chicken thighs (not frozen) and it took 1 hour and 10 minutes. These chicken cordon bleu are frozen. I'm thinking it will take 1 hour at 30 minutes at least. I'm also wondering how long I can hold them in a warming oven. Any advice? |

About an hour and a half is good, check center with a quick read thermometer to 170. Preheat the oven 20 minutes before cooking. Turn off fans and turn temp to 180 to hold. |
