I am making chicken fajitas for 300 people and chicken Alfredo for 300 people how many pounds of boneless chicken breasts would I need to cover both meals? Thank you. |

I don't use chicken breast for fajita- I use thigh. For the fajitas, 1 pound raw boneless for each 4, adding vegetables. Read the fajita page. For the Alfredo, if doing grilled and sliced, 1 pound per 3, if cut up in the sauce 1 pound per 4. If you were doing just chicken in serving pieces it would be 2 pounds raw per 5.
