In a follow-up to my questions yesterday I would like to know if I can make two dishes ahead of time, namely a Parmesan potato dish and a corn soufflé. My thought on the potatoes was to do the dish; cook potatoes in butter and cream, place into a chafing dish and freeze. A few days before the party place in refrigerator to defrost and on the day of the party top with parm and bake. Is that safe and will the results be good? Same for corn soufflé. Thank you!

Potatoes do not freeze well in the home freezer, there is a serious loss of texture. If you need to do this you may want to switch to noodles or rice.

You could parboil the potatoes 2 days ahead and hold in the refrigerator, which would cut down the cooking time day of.

The corn souffle can't be baked and then reheated. Try a Stouffers frozen corn pudding/souffle and you will see it is frozen uncooked.
