It depends on what the other person likes, and the setting. If you are thinking of dinner, you want to set a table for 2 with candles and wine. Since you are anxious about your cooking, I suggest potatoes instead of rice, and maybe roast chicken or cornish game hens (nice looking, easy, and you can either eat politely or tear them apart with your fingers), or a beef stew or potrast finished in the oven. Al great winter food. Dessert is important- chocolate something if favored by the guest, and maybe some coffee or Irish coffee. Otherwise a baked fruit cobbler (apple? cherry?) with a scoop of vanilla or butter pecan ice cream, would be tasty. Salad is not too important, I might skip it entirely or go with sliced somethings- tomatoes and cucumbers with whole black olives and a little feta cheese crumbles over. Whole green beans or asparagus for the vegetable.
