I'm roasting two whole boneless rib roasts in one 30"oven. I plan to use a half sheet pan with a cookie rack on top. I'll put them side by side. I have thermometers for each. Do you think I'll have to rotate them? Is 325 or 350 better? By the roasting chart it seems as though they will take about 4hours. I will have to hold them a while so would internal temp of 120 be right for medium (pink)? |

325. Only takes as long as the larger; DO definitely pull by thermometer, and 120 is good. Check the beef roasting article. |
