Hi Ellen:

I came around your kitchen cook talk page while searching for food quantity portions and saw some helpful info you provided to others. I'm hoping you can help me too...I need it!

Do you have any advice on how much fruit to buy for 130 people to serve as snacks? I was thinking apples, possibly strawberries, and maybe another easy to handle fruit to serve?

Also, I need to feed the same number about 100 Girl Scouts and 30 adults dinner. We are doing tacos and would like to know how much fixins...heads of lettuce, tomatoes, sour cream, olives, salsa, chips, tortillas, and pounds of ground beef do you recommend?

What would you recommend as a quick and easy to distribute/ clean up dessert option after dinner to feed this 130 crew?

I'd love to hear back from you by afternoon PST 12/13/13 because I need to buy all the produce starting around then...please.

One deluxe fruit tray for 100 would be the right amount. If you must do apples, get the cut ones that are treated to avoid browning, the whole apples are unpopular and you end up with lots of waste.

Taco bar, go to the taco bar page, do 1 1/2 times the amounts for 100 (the girls are fairly heavy eaters with no boys around). 1 1/3 is OK if there are lots of younger scouts. Very complete.

Cookies and bars for dessert. 4 smallish per person. I cut the huge slab brownies and bars into 4 pieces for this service.

The grown ups will thank you for coffee- 1/2 the dinner coffee amount on the beverage planning page.
