roast beef, mashed potatoes, green beans

I'm serving roast beef, mashed potatoes, canned green beans, tossed salad for a benefit dinner. How much do I need of each for 350 to 400 people?
And should I use russets or reds for the mashed potatoes?

boneless beef, suggest slow cooked chuck or top round, 50 pounds per 100
mashed potatoes, 45 pounds raw per 100, definitely russets and not reds
salad per the plan for 100 page
5 #10 cans per 100, but ellens better green bean casserole is better, see the Big Pots page
