We have approx. 160 for a wedding. THe menu is bbq chicken/broasted chicken, rigatoni and meatballs, macaroni salad, green beans, corn, cheesy potatoes, cabbage & noodles. I need to know apprx how much of each to make. Thank you.

Ellen, Thanks so much for this great site. I am having my wedding and picnic/ bbq reception in my backyard July 19, 2014 for 130 people. Wedding is at 6:30. Dinner starts at 7:30. Here is what I am planning -- Can you let me know if this sounds accurate? Maybe you can fill in some holes I am missing? I am particularly confused about how quantities change when you are serving 2 meats. Perhaps that's not the best idea?
Dinner
Turkey Breast -- 25 lbs
Pork Shoulder (pulled & chopped) -- 30 lbs
Hot BBQ Sauce
Mild BBQ Sauce
Pit Baked Beans w/meat -- 25 lbs
Baked Macaroni & Cheese -- 35 lbs
Chopped salad ? lbs
Watermelon 6 seedless ?
Dinner Rolls

Nibblies
Veggie/Relish Tray (quantity?)
Cheese Tray (8lbs sliced salami or similar, 10 lbs cheese, 8 lbs crackers)

I’ve not done this before and we, like most folks I suppose, are trying to stay in a pretty tight budget.

bbq chicken/broasted chicken, Use the chicken table on the plan for 100 page, it depends on what cuts/ pieces you use.

rigatoni and meatballs,
cheesy potatoes,
cabbage & noodles,
macaroni salad,
This is a lot of starches. Please consider doing just 3, maybe switch the mac salad to green? Write back.

green beans, 36 pounds
corn, 38 pounds

You need an appetizer table, this is discussed in many wedding reception threads.

Nibblies
Veggie/Relish Tray (quantity?)- do two classic relish trays from the veggie tray page
Cheese Tray (8lbs sliced salami or similar, 10 lbs cheese, 8 lbs crackers)- this is just enough for 100, please increase about 1/4

Dinner
Turkey Breast -- 25 lbs if this is raw weight
Pork Shoulder (pulled & chopped) -- 30 lbs
These amounts are good for 100, increase about 1/4
Dinner Rolls- 2 moderate size per 100
Hot BBQ Sauce
Mild BBQ Sauce
You need 1 cup per 5, you decide on how much hot vs. sweet
Onions- about 10 pounds sliced and soaked
Pickles- 1 gallon

Pit Baked Beans w/meat -- 25 lbs- you need 4 gallons, not 3
Baked Macaroni & Cheese -- 35 lbs- increase to about 40

Chopped salad ? lbs- see the 7 layer salad on this site and increase to serve 130

Any of these salads can be made ahead

Watermelon 6 seedless, you need at least 65 pounds?

Assuming you have cake and desserts? Add dinner level coffee with dessert and have a look at the beverage page.

Hi Ellen! The turkey breast is cooked weight. Should I still increase by 1/4?

I'm sorry -- I got lost. You mentioned 10 lbs of sliced and soaked onions and a gallon of pickles. What would that be for?
