When cooking the mushrooms don't I want to cook all the liquid out or have I cooked them too much if they are rendering a lot of liquid?

You do want to cook them very tender, which is almost dry, but not dry. They shrink a lot. You don't want them releasing a lot of liquid into your sauce.
