My Fiance has asked me to make a family owned cooked sausage recipe for for a sausage, cracker, cheese and spread display for our wedding reception. We are only going to have it out for people to enjoy before the dinner starts. However, we are expecting around 200 guests at the reception. Any idea on how much sausage I should make?

1 pound raw per 8 is the minimum, that will leave about 1 1/2 ounces per person.
