05/11/06 		You need to look just a little harder, I have about 8, including a spicy Nepalese one and an authentic Russian one that turns pink because of beets. Look in the slaws, mac and potato salad page in Big Pots.

05/19/06 		I wonder if Cheryl's question was a trick question- wouldnt you need approx 40 lb of potatoes for 40 lbs of potato salad ?? It would be close, allowing for weight loss due to peeling and weight gain due to dressing...

Interestingly enough, some recipes add an equal amount of weight in dressing, chopped eggs and other vegetables. So, the amount needed for catering is most often given by volume- 1 gallon total sides per 10 people- and the weight varies depending on what all is in the salad. Anyway, some recipes use new potatoes not even peeled...

I don't worry about trick questions- the really weird ones I just remove, the rest answer, no big deal...
