roasted veggies for 55 people

Hi we are having 55 people for dinner were going to roast in the oven onions, red & yellow peppers, mushrooms, eggplant,& zucchini. How many pounds of fresh veggies would we need to buy? And how long should we cook them? we would rather have them a bit ala-dent. Please and thank you.

Here is a simple combo of winter veggies for 8 people:
Ingredients

1 pound carrots, peeled
1 pound parsnips, peeled
1 large sweet potato, peeled
1 small butternut squash, peeled and seeded (about 2 pounds)
3 tablespoons good olive oil
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons chopped flat-leaf parsley
