I am having a masquerade party for 150 people. I will be serving the food buffet style. I am planning on making 2 large trays of the following: Baked Ziti Eggplant Parm Penne alla vodka sausage and peppers rice and beans roasted red potatoes sting beans with garlic chicken fingers Swedish meatballs chicken franchese plus salad and bread |

Hi, Janet, Are you deeply attached to all these different kinds of food? For 150, it is more usual to have just 2-3 entrees, 2 starches; this cooks up easier, costs less, and has fewer leftovers. Here is a suggestion on tweaking it: Swedish meatballs- move to appetivers, add fruit tray and cheese tray

Baked Ziti sting beans with garlic- good, about 45 pounds, could add second veg, roasted or antipasto style Write back on whether you want to tweak your menu |

I like to offer different entrees so I know I will definitely have something everyone likes. My guest are all European Italian and Serbian plus some of the guest does not eat pork and they all love to eat. If I do the following:
Baked Ziti If I do the above how many of the large trays would I need of each? |

OK, for 150 people, this is what I would do:
Chicken Franchese or Marsala, do for 100, see recipe on my site for guidance on amounts; keep pieces small, so a full serving would be 2
A full tray for pasta is usually calculated at 24 servings
Eggplant Parm- 4 trays Salad, you can depend on the plan for 100 page, do 1 1/2 times the amount for 100. Bread/rolls, about 20 pounds, 4-5 pounds butter If this saves you time, trouble, or money, please make a donation, maybe a dime per guest, to support this site. Thanks. |
