We are having a luncheon for 25 Red Hatters, followed by a meeting. We would like to purchase chicken salad and "doctor it up" (to make our lives easier, of course). We will serve on 2 romaine leaves, with a cluster of red grapes, coleslaw with mandarin orange and a mini croissant. How much chicken salad should we purchase (1/3 c. each). Thanks!!! |

I would want to go with at least 1/2 cup each, as the usual luncheon serving is 1 cup. I would buy a gallon and divvy it up amongst the plates. A deviled egg, perhaps with a dab of mango chutney to decorate, would be a lovely garnish. And a tip of the red hat to you. |

i'm making chicken salad for 60 people-the one with oranges, pineapple, nuts, celery & onion. i want to have at least 1/2-1 cup per person. how much chicken do i need to buy? i'm using the frozen chicken breasts. thank you |

2 pounds of boneless meat makes 4 cups or 1 quart of chopped, cooked meat. Use yur recipe to figure how much meat to buy. |
