Pork loin tats? Not sure what that is, and 10 pounds is not sufficient for 50 people, if that is the only meat. You cannot safely reheat on the sterno tray. You MUST reheat on the stove or in the oven to at least 160, then transfer to the preheated sterno. Write back with more info about your dish. |
