Ellen I am in charge of preparing lunch for 250 people at my church in two weeks and our menu is - White rice topped with either a saucy chicken and veggies or topped with a red beans with ham, a salad and a dinner roll. My questions is about the rice - How much do you think I will need and do you have an easy (steam table pan) recipe Thanks for the help |

For this type meal, I usually allow 12-15 pounds dry rice per 100 (lesser amounts OK for largest groups). I use the baked rice recipe on the recipe box page to do it in the oven after an inttial stove-top boil. |
