I am making country style ribs, cheesy potatoes coleslaw, and homemade rolls for a retirement dinner for 50..I am confused as to how much meat to buy. I hear anywhere from 1/2lb to 1lb per person. This is all adults after work...could you clarify how much meat to buy..thank you.

The usual cut has much meat and little bone, but in some areas, more bone. This assumes not much bone.

If you are plating, you can do 1/2 pound raw per person. If you are buffet, allow at least 3/4 pound raw.
