Fajita bar for 60 guests with other appetizers

I am catering an afternoon Celebration of Life ceremony from 2pm-6pm. We will be doing a fajita bar for 60 guests - along with 4 passed appetizers and a cheese & crackers display. How much Chicken & Flank Steak would I need to use?

Hope this goes beautifully. Starts midafternoon, but many folks will eat early supper with that menu.

Younger crowds tend to eat 5/8 beef, 3/8 chicken, older (50+) or more ladies, about half and half. You want to aim for about 4 ounces cooked meat per person, which is about 1 pound raw boneless, plus the grilled veggies. Please see the fajita page for much more info.
