family renunion for 150

Hi there,

out caterer. Fell thru so In the place of her I was asked to provide the good for our family reunion. Its gonna be about 150 people, almost equal to kids. And adults..

I'm not sure how much of each item ill need so can you help me out.

the menu is: 2 day event
wings, meatball or meatball cupcakes tipped with mashed potatoes, slider sandwiches, 3 trio dip: buffalo dip , spinach n artichoke dip and a gumbo dip and chips

fruit and cheese trays or displays
desserts.. I'm thinking. Minis or whole cakes or whole pies..

the 2nd day were doing a basic pasta dinner...
fettuchini Alfredo with chicken breast, salad as well as a broccoli green bean saute with. Peppers and bacon, corn on the cob, homemade rolls, fruit tray and desserts.

You can do much better for family cooking with some menu tweaks. For example, casseroling the pasta dish and making ahead. Also, not sure if you realize that there are probably some vegetarians in the crowd, and you need to make provision.

Here are suggestions for 150 people.

First you need 4 people in the kitchen and 10 people out front to set up, serve and clean up each meal. Get them signed up now.

Second, the beverage page has counts for napkins, plates, etc as well as beverages. Look there for help.

wings, very high cost- consider switching to legs at half price- 2 smallish legs per person, if not, at least 1 pound wings per 3; dipping sauce, 1/4 cup per person.
meatball or meatball cupcakes- tiresome, lots of prep unless you use frozen meatballs
tipped with mashed potatoes, skip. Meatballs, 35 pounds per 100, 3 quarts sauce per 10 pounds.
Do potato salad below, or plain baked potatoes, see potato bar page.
slider sandwiches, consider doing sloppy joe style instead? Recipe for 100 on this site, 2 slider buns per person

3 trio dip: buffalo dip , spinach n artichoke dip and a gumbo dip and chips. None of these dips are kid friendly. You need 1 pound chips per 12, 1 pint dip per pound= about 10 pints. Suggest you do 1/4 plain salsa
need slaw or salad- 4 gallons slaw or salad per the plan for 100 page
need starchy salad- 6 gallons potato salad (about 60 pounds), or 9 gallons dry pasta

Dessert??? Look at the sundae bar for a real treat! Or 3 full sheet cakes.

Day 2
basic pasta dinner...
fettuccini Alfredo with chicken breast, see the sausage mozzarella bake on the spaghetti page, do 1 1/2 times the recipe, or use the baked spaghetti under basic budget entrees in Big pots. You can sub the Alfredo sauce on the spaghetti page for any tomato sauce and you need to make 1-2 9x13 with no chicken/meat- you could do 1/2 red and 1/2 white...

salad, use the plan for 100 page, 1 1/2 times the amount for 100
broccoli green bean saute with peppers and bacon, you need 35 pounds ready to cook green veg, 3 pounds each bacon and peppers
corn on the cob, do off the cob! 4 #10 cans per 100
homemade rolls, find a good bakery and do that- 2 nice per person; at least 14 pounds per 100 and 2- 2 1/2 pounds butter per 100
