Hi Ellen I am tasked with making an egg casserole for 40 people for breakfast. Can you give me some idea of the amounts I will need as far as eggs, milk, sausage, onions, bell pepper and spinach? This is a very simple light brunch so it will just be the egg dish, a small muffin and fruit. Thanks |

Use the breakfast planning page and do 1/2 the amount for 100- some people will take a larger portion. |
