Hi Ellen, thank you so much for this site; it's been such a help to me! It's been my #1 food reference for since I started planning! I'm self-catering my own wedding for 150. Serving as meat entrees: pulled pork and fried chicken. I visited the page, but I'm still confused on how to calculate amounts of each. Should I have enough for each person to get a serving of each? How much of each? Thanks for your help! |

For this menu, 1 pound ready to serve pulled pork per 5 PLUS 1 piece of chicken per person, and be sure to have a side dish that can serve as a vegetarian entree for those who don't eat either meat. |

Any suggestions on a good vegetarian side? Pasta salad? Also, would two buffet lines be sufficient for 140-150 people? Thanks for your help! |

And for the buffet lines, can people serving themselves from both sides of the chafer (to create 2 lines), or have two separate chafers per item? |

It will be pulled pork (sandwiches) and fried chicken main dishes. And baked beans, cole slaw, southern succotash, potato salad, sweet potato biscuits and corn muffins. Also, maybe wedding soup. |

Thanks so much for the reply! My last question (I hope), concerning the buffet lines: in order to have two lines, can I have people serving themselves from both sides of the chafer, or do I need two separate chafers per item? Thank you again for all your help! |

2 sides of the same chafer is fine- you just need to be sure you keep swapping the trays (you put the new one in, then put the last of the previous on top- do NOT fill the existing tray. |

Fantastic! It will save me a lot of money not having to buy/rent two chafers for each dish. I plan on using the disposable aluminum dishes made for chafers for the refills, and two girls on vigilant watch for tray replacement. Thanks again for all your help! |
