PLEASE HELP! I am RESPONSIBLE FOR cooking White Rice and Pinto Beans for 250 Friday for a Benefit and I read to bake the rice for such large quantities but only have a roaster oven and/or disposable aluminum roaster pans to bake it in. I have read to use a parboiled rice for faster cooking? ANY SUGGESTIONS FROM EXPERIENCE WILL BE GREATLY APPRECIATED! Pinto Beans: How to judge size of pot for each batch? And length of cooking time to allow? Grateful in TX |

Hi Debbie, Each 1 pound rice makes about 6 cups ( 1 1/2 quarts), each 1 pound beans about 4-5, (something over a quart). How to do a roaster of rice, you would need 4, is in the baked rice recipe on the recipe box page. If doing aluminum pans in the oven, set the pan on a cookie sheet, bring the rice to a boil first on the stove, transfer and cover tightly with foil. |
