I am making chicken cordon bleu for my daughters wedding and I want to know if I can put it all together ahead of time then freeze it and cook it that day. Also, we are also having smoked tenderloin so I was thinking 60 pounds of each meat would be sufficient for 175 people. |

I have only used professionally prepared frozen cordon bleu. Take a look at my 2 well-tested precooked frozen chicken recipes for ideas.
If you decide to do home-made, be sure you pre-test with a family run. Also, for food safety, you can't partially pre-cook and use a home freezer- it doesn't clear the meat of potential germs, and then doesn't freeze fast enough to prevent growth. |
