12/06/05 		How many pounds of fresh green beans do I buy to feed 60 people? Also, how many pounds of fresh potatoes do I use when making scalloped potatoes to feed 60 people? Thank you for any incite!

12/07/05 		If you check the quantities for 100 page in Big Pots and use 2/3 you will be in the ball park. You will want at least 15 pounds of green beans, a little more if served whole and a recipe that uses at least 25, and up to 30, pounds of potatoes.

09/06/06 		See the mashed potatoes for 25 on the Big Pots page and make 2 1/2 times the recipe. The broccoli depends on fresh or frozen. 20 ounce bag frozen is 7 servings.

11/16/06 		100 sandwiches 43% vegetarian
We are bidding on a catering job ( the lunch portion and were going with turkey cream cheese
cranberry sauce on a rollup sandwich with water, small bag of chips, cookie for $10.00
We found that 43% had to be vegetarian and we have never done vegetarian before. Tom is Greek and we use okra, eggplant and feta cheese
would like a receipe.

First of all, if this is vegetarian, find out if it is with or without dairy. Some vegetarians called "vegans" do not use any dairy or eggs, which would rule out your feta cheese or cream cheese.

Consider a variety of options. For example, you could offer 6 rolled stuffed grape leaves (aetna is a reliable brand) with a little snap top cup of olives and a little cup of feta cheese cubes.

Or, you could make the unchuck gluten roast using chicken/turkey seasonings and offer a delicious rollup with seiten/gluten. It slices thin like a roast and can be made several days ahead. This is vegan, and will be a delight to vegetarians in the know.

A pocket pita stuffed with Greek salad, feta cheese, pitted olives is a possibility. I like a cashew butter or hummus spread on the sandwich with a little cup of baba ganouj or hummus added for topping.

For $10 I would make sure there was a little surprise or treat such as carrot rings with a ranch dressing cup or some other little finger salad in the box.
