The 10x15 pan is 150 square inches, while the 12x17 pan is 204 square inches. You can increase any standard recipe by 1/3 (try holding the salt the same)and get a pretty good result, because the depthe of the batter or dough stays the same, and this is the most critical issue in this kind of increase. If the edges get a little too brown or crisp- -Be SURE to preheat, so the heat hits everything at the same time, rather than working from the edge in as it increases -reduce heat by 10-15 degrees -smooth carefully so the middle is the same or even a tiny bit thinner layer than the edges.
